A fast, high-protein dinner with crispy, seasoned shrimp, green onion, fresh lemon, and a little parmesan. The bright lemon and green onion bring a lot of flavor to the shrimp and noodles. The whole thing comes together in about 25 minutes with 49g of protein per serving. Make a single bowl for dinner, double the recipe for two, or prep an extra serving for the next day. Easy, satisfying, and delicious.
And a little reminder while we’re here: you can absolutely eat a bowl of pasta and enjoy it without feeling guilty afterward. Your body uses carbohydrates for energy, recovery, and brain function, and they can be an important part of a balanced, nourishing diet. You don't need to "cut carbs" to build a strong, healthy body.
If you're managing diabetes or keeping an eye on your blood sugar, you may prefer a higher-fiber pasta, which can help slow the rise in blood glucose after eating. As always, your doctor or dietitian can help you determine what works best for your individual needs.
Carbs aren't the enemy. They're fuel.
Ingredients
8 oz raw frozen shrimp (I use Trader Joe's)
2.25 oz dry pasta (I use Goodles Loopdy-Loos)
2–3 green onions, sliced
Avocado oil spray (0 calorie)
½ tbsp avocado oil, for the pasta
1/2 lemon
2 tsp grated parmesan
Salt, black pepper, garlic powder, onion powder, and paprika, to taste
Instructions
Thaw the shrimp in a bowl of cold water for 10–15 minutes, then pat them dry with a paper towel.
Cook the pasta in salted boiling water according to the package directions, then drain.
Season the shrimp with salt, pepper, garlic powder, onion powder, and paprika.
Heat a nonstick pan over medium-high heat and coat it with avocado oil spray. Add the shrimp and green onions.
Cook the shrimp for 2–3 minutes per side, just until pink and opaque. Shrimp cooks quickly, so don't walk away.
Toss the pasta with ½ tbsp avocado oil and a squeeze of lemon.
Top the pasta with the shrimp and green onions, squeeze more lemon over everything, and finish with the parmesan.
Notes & Swaps
Pasta swap: Any short pasta works, but a protein pasta like Goodles keeps the protein high. With regular pasta, recalculate the macros, since protein will be lower.
Cooking for two: Double everything; the macros per serving stay the same.
Meal prep: Keeps in the fridge for up to 2 days but I personally would not eat shrimp after 1 day in the fridge lol just me.
Don't overcook the shrimp: Take it off the heat as soon as it curls into a "C" shape. An "O" shape means it's overcooked.
