A toasted, crispy lavash wrap filled with fluffy cottage cheese scrambled eggs, turkey bacon, sliced chicken, spinach, and a kick of hot sauce. With about 58g of protein and plenty of fiber, it keeps you full for hours, whether you eat it at 7 a.m. or as an early lunch.
Ingredients
1 lavash bread (I use Trader Joe's)
2 eggs
¼ cup cottage cheese
Your favorite hot sauce (I use Tabasco Chipotle)
2 slices uncured turkey bacon (I use Trader Joe's)
3 slices oven-roasted chicken breast (I use Trader Joe's organic)
½ cup fresh spinach
Salt and pepper, to taste
Instructions
Cook the turkey bacon in a nonstick skillet over medium heat until crisp, 3–4 minutes per side. Set aside.
Whisk the eggs with the cottage cheese and a pinch of salt and pepper. Scramble them in the same skillet over medium-low heat until just set, 2–3 minutes.
Lay the lavash flat and spread your favorite hot sauce over one half.
Layer the spinach, chicken, scrambled eggs, and turkey bacon over the sauce.
Fold the lavash in half over the filling.
Toast the wrap in the skillet over medium heat for 1–2 minutes per side, until golden and crisp.
Slice in half and serve.
Notes & Swaps
Make it vegetarian: Skip the bacon and chicken and add egg whites or extra cottage cheese for protein.
Meal prep: Cook the eggs and bacon ahead, then assemble and toast the wrap in the morning.
Smoother eggs: If you don't like the texture of cottage cheese curds, blend it with the eggs before cooking.
